600 grams of boiling potatoes 1 onion or three shallots, cut into cubes 3 tablespoons finely diced bacon oil for freshly chopped chives, cut into fine rolls 1 tsp butter salty and pepper from mill
Thoroughly clean potatoes under cold water with a brush. Place potatoes in a pot, cover with water and boil for 15 minutes. Allow potatoes to cool well (preferably overnight), pellet and cut into three millimeters thick slices. Soaking potatoes with vegetable oil saves fat in pan. Heat pan, add potatoes and sauté golden brown on several occasions. Add bacon and onions and sauté. To combine ingredients, add butter and chives to skillet and mix thoroughly. Season with salt and pepper.
Anor tip: The relation between size of pans and amount of potatoes is also important. Say: A large pan and little food will lead to perfect result!
